This week I themed hard….and am using chicharrones twice!

Ground pork rinds are a great gluten-free, low carb breading replacement that adds awesome texture and flavor. Trust me.

MONDAY – Greek Meatball Bowls (Plan Ahead “PA”: make Greek-Style Meatballs – recipe here)

TUESDAY – Sheet Pan Steak Fajitas (PA: slice veggies and steak and compose sheet pan morning of or evening before)

WEDNESDAY – Wild-Caught Cod and Vegetable Thai Green Curry (PA: chop vegetables)

THURSDAY – Parmesan Crusted Pork Chops with Roasted Radishes and 🥦(PA: chop radishes and make “breading” by smashing or grinding pork rinds and mixing with parm)
